"Taking inspiration from an American classic, I decided to give the BLT an Italian accent. Instead of white toast, I am using potato focaccia, the bacon has been replaced with pancetta, and I have enhanced the mayo with a spiced herb parmesan spread."—Chef Fabrizio

Dinner Menu & $35 FOUR COURSE MENU
"I love pan-seared tuna with caponata because it has very distinct flavors. It is the mix of vegetables that I love the most—tomatoes and eggplant finished off with basil oil. This dish is personal to me since my wife has taught me how to appreciate seared seafood, and I love it! The tuna is coated with fennel seed, coriander and mustard seed. This adds not only personality to the dish, but it also shows people who are unfamiliar with Italian cooking, that we use many different spices."—Chef Fabrizio
